HYPERGREENS Hummus RECIPE
Ingredients:
1 can of chickpeas, drained and rinsed
1/4 cup tahini
2 tablespoons lemon juice
2 cloves of garlic, minced
1/4 cup olive oil
A handful of mixed microgreens (about 1-1/2 Cup mixed with:red radish, speckled peas, sunflower, and broccoli)
Salt and pepper to taste
In a food processor, combine the chickpeas, tahini, lemon juice, and minced garlic. Process until smooth.
While the food processor is running, slowly drizzle in the olive oil until well incorporated.
Add the mixed microgreens to the food processor and pulse a few times until the microgreens are finely chopped and well combined with the hummus.
Season with salt and pepper to taste. Give it a taste and adjust the flavors if needed.
Hypergreens Creamy Soup
When onion and celery are tender, add the chopped microgreens, chicken bouillon granules, 1 Cup water and 1/4 tsp salt to saucepan. Cover and simmer for 10 minutes.
Blend milk and cornstarch and then stir into saucepan. Cook and stir till thickened and bubbly. Serve warm; makes 4 servings.

Directions: First remove kale leaves from their center stalk. Put the leaves and coconut milk into your blender and blend until smooth. Add remaining ingredients and blend once again until smooth. Serve immediately.

Directions: If your blender is not powerful enough, make sure to chop almonds and apple into small pieces before you start blending. Then put all the ingredients into the blender and mix everything until smooth. Enjoy immediately.
